Blueberry Crumble Bars

When I think summer desserts, I immediately think of berries. Summer always means heaps of fresh berries, but also berries loaded into crumbles, tarts, and pies. Since I didn’t have the time to make a full berry pie last week but wanted to dive into the berry world, I landed on these blueberry crumble bars. The center is perfectly juicy and gooey, and the crumble top layer adds a perfect crunch. This past weekend I scooped some of my last crumble bars into ramekins and served them topped with vanilla bean ice cream. If there was a dessert combination hall of fame (a girl can dream), berry crumble bars and ice cream would absolutely be in there.
