Butterscotch Chocolate Chunk Cookies

I wasn't planning to bake last night, but I was so pumped up after the Warriors win that I figured it would be a good time to start working through my excessive butterscotch chip stash. I've been accidentally (I swear!) collecting bags of them.

Butterscotch is one of those love hate dessert flavors. I've heard people say it's way too sweet for them, but as someone who hasn't met an ultra sweet dessert they didn't love, I can't say I've ever thought that. When I moved out of my last apartment in April I discovered a stash of butterscotch chips that I never new excited. I didn't realize I had been hoarding them away, but the 5 bags I discovered told me otherwise. I decided to start working my way through them with an easy butterscotch chip cookie, and these ones from Two Peas and their Pod (found on Pioneer Woman) seemed like a natural starting point. I love that the batter didn't need to be refrigerated before baking (#impatientclubmember) and the combo of the butterscotch and chocolate chips plus a little sea salt was perfect.
