Carrot Cake Cupcakes with Cream Cheese Frosting

In the past year I've made many, many mini carrot cake cupcakes for the events company that I bake for (they host hoppy hour events with real bunnies - aw!). I was never a huge fan of carrot cake in the past, but I've come to really love eating these cupcakes. The generous cream cheese frosting to cupcake ratio may have something to do with it... :) I made a batch of these yesterday and had some extra batter that I turned into a cake for my boyfriend and mom. I think the flower decorations were more for me than my boyfriend, but he still appreciated the cake. I've never looked for another carrot cake cupcake recipe since I love this one so much, the cake is sweet and perfectly spiced, and the cream cheese frosting tastes remarkably light.

Yield: Approx. 12 cupcakes or 36 mini cupcakes (I doubled the recipe last time and it made 72 minis and an 8x8 cake)
