Cherry Streusel Sour Cream Muffins

I’m constantly on the search for the perfect muffin. I love moist, tender and soft muffins, but I find that they are often dry inside. I stumbled upon these muffins a few weeks back, and have already made a few different variations. Last week I had extra cherries in my fridge so I decided to make this latest batch with cherries. I added a streusel topping because I think most fruity muffins are well served by a streusel crunch. I’m still working on my streusel recipe but this is what I’m working with now:

Streusel topping (enough for 9 muffins)
1/3 cup all-purpose flour
2 tablespoons brown sugar, packed
1 tablespoon granulated sugar
1/2 teaspoon cinnamon
2 tablespoons melted butter

  1. Mix the flour, brown sugar, white sugar, and cinnamon in a bowl.

  2. Pour in melted butter into the bowl. Mix the butter into the dry ingredients with a fork, and make sure to leave some larger chunks in there.

  3. When the muffin batter is finished, fill each paper-lined muffin cups about 2/3 the way to the top, and evenly divide the streusel topping, among 9 muffins.

Muffin recipe from Taste of Home. I added 1/2 teaspoon to the mix, and subbed the chocolate chips for 1 and 1/4 cups cherries.
