Last year my friend hosted a seafood boil for her birthday party, and it was an epic event. Iād never been to a seafood boil, so I had no idea that you throw the seafood straight on the table and eat it off! I personally stuck to cornbread with the most delicious honey butter (#vegetarianlife) but everyone else chowed down on shrimp boiled with sausage, corn and onion. I wanted to make a cake or cupcake for the event, and my friend suggested coconut since it fit in with the southern theme. Coconut cupcakes? Challenge accepted.
I used to shy away from anything coconut (I couldn't give my Almond Joys away fast enough on Halloween!). I've grown to love coconut errrrything, including these delicious cupcakes. They have the best cake texture and the buttercream is soooo creamy. I also topped when with a little meringue kiss because I had a meringue kiss phase where basically all my desserts were topped with these little kisses. I'm excited to make these ones again soon, they are the perfect treat for any coconut fan. Which is apparently me now!
