Coconut Oil Chocolate Chip Cookies

Last year it was brought to my attention (thanks mom) that one expense that might be cutting into my weak attempts to save money could be my baking supplies. At first I scoffed, “Baking supplies? That can’t be thaaat much.” Then my mind wandered back to $12 bottles of Madagascar vanilla paste, $8 pink and red Valentine’s sprinkles, and $6 cartons of organic cage free eggs. She may have had a point. I had been temporarily scared off from buying new and delicious (i.e. expensive) ingredients for my baking, and I challenged myself to bake with things I already had around the house.

While I searched my cabinets for viable ingredients I could bake with, I found 4 separate jars of coconut oil.  An accidental coconut oil collection? Jackpot! I spent the next few weeks baking different coconut-centric desserts, and these delicious cookies were one of my favorite recipes I found. You can slightly taste the coconuty flavor, and the oil makes them extra chewy. When I baked these last week I had a slight baking emergency (aka realized I was out of baking soda and had to walk over to Trader Joes mid-baking, leaving the ingredients half way-mixed for an undisclosed period of time). I wasn't sure how that would affect the dough, so I ended up refrigerating it for 30 minutes before baking just to be safe. I loved the end result so much I added the refrigeration time to the official recipe.
