Sometimes choosing a recipe to make takes longer than it should. Way longer. I've spent hours (yes, hours) searching different cookbooks and blogs for the right cookie/muffin/cake/blondie/etc recipe before landing on the perfect one. As soon as I found these pumpkin muffins stuffed with cream cheese, I knew my pumpkin muffin search was complete. The muffin was about as wonderful as a muffin can be - it's filled with a sweet cheesecake, the pumpkin muffin part is spiced perfectly, and the struesel topping is crunchy and sweet. The entire batch mysteriously disappeared within 24 hours so I'd say they were a big success.
