I usually opt for giant, soft and chewy cookies, but recently I was craving something crispier. I thought a nice crispy oatmeal cookie with white chocolate would be good, so I started looking to see if there would any similar recipes I could modify. I ended up finding the exact recipe I was looking for on the Smitten Kitchen website, and decided to make these instead of attempting my own. These are SO dang good. The crispy bottoms balance out the chewy oatmeal centers, and the flaky sea salt is the yin to the super sweet white chocolate’s yang. Unsure if I’m using the yin and yang analogy correctly but the point is that these are a cookie masterpiece. I’ve already made them for a birthday, a housewarming, and a thank-you-for-inviting-me-out-to-breakfast gift.
