Dulce de Leche Stuffed Cookies

Cost Plus World Market is one of those stores that I can’t leave with just the thing I went in for. I popped in looking for a new pillow for our couch, and left with two candles, a vase, guava paste, a bag of imported chocolates, dulce de leche, and a little glass jar that I have absolutely no use for but I still consider an essential must have. I immediately knew I wanted to make dulce de leche cookies featuring my new giant jar of dulce de leche, because I wanted it to be the star of the show.

I played around with some different cookie bases and am still in experimentation mode, but so far I love making them with the cookie base from the Cooking Classy Twix cookie recipe (linked below). Once the cookies come out of the oven, I immediately pressed the thumbprint indentation again with the back of a teaspoon to make them deeper (bigger indent equals more dulce de leche!). Once the cookies cooled, I spooned the dulce de leche into the indents, sprinkled a few sea salt flakes on top, and proceeded to eat about six. Sadly that is not an exaggeration. But please let that serve as a testament to how delicious these are, because they really are wonderful!
