Espresso Caramel Thumbprint Cookies

Espresso cookies - I know I throw around the term favorite a lot, but these may actually be my favorite cookies. I’m also usually my toughest critic when it comes to my desserts, but even I was impressed with myself after I made these. They are so insanely delicious. The chocolate espresso cookie is the perfect base for the decadent coffee caramel sauce. Coffee caramel?! I didn’t even know this existed until I made these, and now I totally want to load up all my cookies (or better yet, all my desserts) with this caramel. Not only are these unbelievably tasty, but they actually look classy so they’d be perfect to serve at an event. And by event, I mean any night after dinner.
