Lemon Scones with Lemon Glaze
March 29, 2018 - Thursday
I’ve been on a major scone kick now that I’m living in Dar es Salaam. All I need is a big bowl and my pastry cutter (which I conveniently brought with me), and there are surprisingly few ingredients. Do I wish I had heavy cream to use? Absolutely. Was cream way too expensive at the market here and did I promptly give up and use regular milk? You bet! I love lemon anything so I figured lemon scones were the next scone I needed to make. These are light, fluffy and moist (ugh sorry, no other way to describe them). Also, this lemon glaze is the dessert equivalent of waking up on a Saturday and knowing you have the whole weekend ahead and you have a bomb brunch planned and you feel well rested because you slept in and the sun is shining outside and there is magically a coffee next to your bed and you are snuggling a puppy.
Scone recipe from Sally's Baking Addiction (but I left out the blueberries)
*I don't have an exact recipe for the glaze (whoops). I put about 2 cups of confectioners sugar in a bowl and slowly pour the freshly squeezed lemon juice into it and mix. Once the glaze reaches my desired consistency, I'm done. I promise to actually measure this out one day :)*
