Nutella Banana Swirl Muffins

Last week, I had a full-on muffin meltdown. While I don't like to think of myself as someone whose self-confidence can be shaken by one not-quite-perfect batch of muffins, my meltdown proved me otherwise. I made a batch of Nutella banana muffins with oats in them, and despite following the recipe, the muffins were a bit dry. I do say a bit dry because my taste-testers (shout-out to my mom and boyfriend!) said they were actually really good but they were a "little dry". A little dry!?! As someone who consistently slightly undercooks desserts that's one of the worst things I can hear. After a mini meltdown, I immediately found a new recipe that didn't call for oats and speed-baked to try to get out of my self-proclaimed slump. 

This recipe did the trick! They are super gooey, have an awesome banana flavor, and the Nutella swirls look and taste great. True melt-down averted.
