Peanut Butter Cookies

This past weekend my boyfriend went to a bachelor party in Colorado, and like any good girlfriend I sent him off with a box of peanut butter cookies and a box of cinnamon buns. I figured peanut butter cookies would pair nicely with alcohol (aka be a great snack for when they were drinking). I had extra cookies that I promptly polished off one night later. I love peanut butter cookies, and this recipe is my favorite that I've tried. They are so chewy yet totally hold their shape, and I baked them on tin foil so the bottoms browned slightly and had a liiiiitle crunch. So good. I love peanut butter, and I'll only bake with the creamy Jif or supermarket brands. I can't stand the organic PB that totally separates and gets oily. Nope, I don't want none of that.
