Salted Caramel Brownie Bites with a Caramel Center

This recipe was one of those that  epitomizes how I chose what to bake. A few weeks back, I saw a nice looking picture on Instagram. Salted caramel frosting? Check. Gooey brownie bite? Check. Was that brownie bite stuffed with caramel? You better believe it! The recipe called for a boxed brownie mix, but I was still planning to use my own brownie recipe up until the point that I realized I would be speed making these during half-time of the Raiders game. Half-time baking means I'm baking at 3x speed to make it back to the tv for the second half. I ended up using a boxed recipe, and made my own salted caramel frosting. One note - next time I make these I will absolutely be using mini cupcake liners for the brownies. I thought that a nice healthy spray of PAM would do the trick, but I bunch of my brownies stuck and didn't pop out perfectly.
