Soft and Chewy Ginger Molasses Cookies

I used to think that ginger cookies were boring. I couldn't understand why anyone would chose a ginger cookie over a gooey chocolate one; I just didn't get that appeal. I'm not sure why but that changed this year and I've grown to LOVE ginger cookies! This is the third ginger cookie recipe I've tested in about a month (see, I seriously love them). These ones are chewy and so soft, exactly like their title says!
